Smoked Salmon with Orange Honey Garlic Glaze

Ingredients

  • 1 whole side of salmon
  • BBQ seasoning (see notes for preferred brand)
  • 4 tbsp butter
  • 2 tbsp neutral oil
  • Zest of 1 orange
  • Juice of 1 orange
  • 4 tbsp honey
  • 4–6 cloves garlic, minced
  • 2 tbsp W Sauce
  • BBQ seasoning, to taste
  • MSG, to taste

Instructions

  1. Preheat smoker to 225°F.
  2. Season the salmon evenly with BBQ seasoning.
  3. Place salmon on the smoker and cook for about 2 hours, until internal temperature reaches 125–135°F.
  4. Make the glaze: In a saucepan over low heat, combine butter, oil, orange zest, orange juice, honey, minced garlic, W Sauce, BBQ seasoning, and MSG. Stir until fully combined and slightly reduced.
  5. After 1 hour, begin checking internal temperature and brushing glaze onto the salmon every 15 minutes.
  6. Once salmon reaches target temperature, transfer to an oven on broil.
  7. Broil for about 5 minutes, until the glaze is set and lightly caramelized.
  8. Remove and let rest for 5–10 minutes before serving.

Notes

Preferred seasoning: Meat Church Honey Hog BBQ seasoning. Adjust garlic, MSG, and seasoning levels to taste. Glaze can be made ahead and gently reheated before use.
