Luby's Fried Shrimp

Ingredients

  • 2/3 cup Flour
  • 2 1/2 cup Saltine Crackers, coarsely crushed
  • 1 cup Buttermilk*
  • 3 Large Eggs
  • 1/2 teaspoon Salt
  • 1/4 teaspoon White Pepper
  • 48 Jumbo Shrimp, peeled, de-veined, butter-flied, with the tails on
  • Cooking Oil

Instructions

  1. Note: I usually cut this recipe in half and use 1 egg.
  2. * Can substitute with 1 cup regular milk mixed with 1 tablespoon lemon juice. Allow to sit for five minutes before using.
  3. Setup breading station: add flour and crackers to separate small bowls. In medium bowl, whisk together buttermilk, eggs, salt, and pepper until well combined.
  4. Holding shrimp by the tail, coat with flour, shaking of excess. Dip into buttermilk mixture, then into the cracker crumbs, coating evenly on all sides.
  5. In large saucepan or dutch oven, add two inches of oil and heat to 325-350 degrees. Fry shrimp, being careful not to overload the pan, until just cooked through and golden brown, about 2-3 minutes.
  6. Place cooked shrimp on paper towel-lined plate to absorb any extra cooking oil after frying.
