RiceSide Dish

Ingredients

  • 1 tablespoon Unsalted Butter or Olive Oil
  • 1 small Shallot
  • 3/4 cup Basmati Rice, rinsed
  • 1 1/4 cups Boiling Water
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black Pepper

Instructions

  1. Melt butter in small saucepan over medium heat. Add shallot and cook until softened, about two minutes. Stir in rice and cook until edges of grains begin to turn translucent, about two minutes. Stir in boiling water, salt, and pepper, and bring rice to boil. Reduce heat to low, cover, and summer until all liquid is absorbed, about 12 to 15 minutes.
  2. Remove saucepan from heat. Remove lid, place folded clean dish towel over saucepan, then replace lid. Let rice sit for 10 minutes, then gently fluff with fork. Serve.
