Carne Asada Marinade

Edit this recipe

By Kris Legg

A bold, citrus-forward carne asada marinade designed for about 1 lb of steak. Orange juice, garlic, spices, and oil work together to tenderize and deeply flavor the meat, making it ideal for grilling.

Ingredients

  • Juice from 1 large orange
  • Fajita seasoning, to taste
  • MSG, to taste
  • Black pepper, to taste
  • 3–4 large garlic cloves, minced
  • Ground cumin, to taste
  • Neutral oil (such as vegetable or avocado oil), enough to lightly coat

Instructions

  1. Tenderize the steak by poking it all over with a fork.
  2. Season the steak on all sides with fajita seasoning, black pepper, cumin, and MSG.
  3. Place the steak in a zip-top bag. Add orange juice, minced garlic, oil, and any remaining seasoning.
  4. Seal the bag and massage to evenly coat the steak.
  5. Marinate for at least 2 hours, or up to overnight in the refrigerator.
  6. Remove steak from marinade and grill to desired doneness. Rest briefly before slicing.

Notes

I use Dia de la Fajita seasoning from Meat Church. Do not over-marinate very thin cuts. Slice cooked steak against the grain for best tenderness.
